This study (open access) used literature reviews and stakeholder interviews to construct a generic supply chain map and identify fraud and food safety vulnerabilities for edible insects. Safety concerns discussed include novel allergenicities and the effect of different processing methods on microbiological safety. The main fraud risk discussed is the artificial enhancement of apparent protein content by adding an adulterant rich in nitrogen (as per the motivation for melamine adulteration of milk powder).
