Food fraud focus: Honey -NMR

‘Honey laundering’ food fraudsters are creating increasingly advanced solutions to adulterate honey by combining it with sweeteners such as sugar syrup and high fructose corn syrup.

The verification process to assess the authenticity of honey is a complex analytical task and has been essential for consumer confidence since the industry became under the spotlight in 2011, when journalists reported that removing the pollen from honey meant it was no longer classifiable as honey. This is not actually the case but it is true that an absence of pollen can make it difficult for laboratories to determine the origin of honey, opening up the door for fraud.   • Is there any plans to also make the honey certified for 13C SCIRA measurements? If the standard also had 13C certified values for the protein, bulk sugars and compound specific sugars it would be very useful.
