Hello, My name is Darren, I am the bakery programme chair in Technological University Dublin . I have fine dining culinary (chef) bakery and pastry arts reformulation experience as well as large scale food manufacturing experience (R&D lead on a state of the art food manufacturing site) . I specialise in innovation, reformulation, education, training and technical writing. I am very interested in the area of Food Authenticity from a procurement, quality and process stability perspective. I firmly believe that accurate data regarding raw produce/ material quality reduces product development barriers and costs (in turn facilitating faster innovation, R&D which if undertaken correctly also can open up new funding) . This opens up a virtuous circle of product/ process knowledge and funding / knowledge supports for an industry/ sector that historically did not see itself as highly technical (when it fact the opposite is true). I am delighted to be academically supporting the team in Rialto Labs, based in Dublin, Ireland who specialise in enabling real-time on-site analysis solutions for the agri-food and bioeconomy sectors as well as enabling exceptional technical reporting for innovation/ NPD teams. I see a unique opportunity to integrate Near Infrared Spectroscopy (NIRS) with a technical reporting framework to speed up innovation, eliminate adulteration and ensure product quality and authenticity for industry and end users alike.
