Developing mass spectrometry based methods for authenticity testing. Rapid, cheap and deployable processes using ambient ionisation technology to provide novel assays which can discriminate between true and adulterated samples. Current method examples include edible oils, meat speciation, identification of herbs and spices and melamine contamination.
